Pork Loin with Apples & Onions

  • 1 boneless pork loin roast (5 pounds)
  • 2/3 teaspoon salt
  • 2/3 teaspoon pepper
  • 2 1/2 tablespoon olive oil
  • 8 large Fuji or Gala apples, cut into 1-inch wedges
  • 5 large onions, cut into 3/4-inch wedges
  • 12 garlic cloves, peeled
  • 2.5 tablespoon minced fresh rosemary or 2.5 teaspoon dried rosemary, crushed

Instructions

    1. Preheat oven to 350°. Sprinkle roast with salt and pepper. In a large nonstick skillet, heat oil over medium heat; brown roast on all sides. Transfer to a roasting pan coated with cooking spray. Place apples, onions and garlic around roast; sprinkle with rosemary.
    2. Roast until a thermometer inserted in pork reads 145°, 45-55 minutes, turning apples, onion and garlic once. Remove from oven; tent with foil. Let stand 10 minutes before slicing roast. Serve with apple mixture.

Baked Carrots

  • 3 pound baby carrots
  • 3 bunch green onions with tops, chopped
  • 3 cup chicken broth

Instructions

  1. Place the carrots and onions in an ungreased pan; pour chicken broth over all. Cover and bake at 325° for 1 hour.

Parmesen Potatoes

  • 5 pounds yukon gold potatoes, cubed
  • 5 pounds red potatoes, cubed
  • 2/3 cups canola oil
  • 2 cups grated Parmesan cheese
  • 5 teaspoon garlic powder
  • 5 teaspoon paprika
  • 2 1/2 teaspoon salt
  • 1 1/4 teaspoon pepper

Instructions

    1. Place potatoes in a large bowl. Drizzle with oil. Sprinkle with cheese, garlic powder, paprika, salt and pepper; toss to coat. Transfer to a greased 15x10x1-in. baking pan.
    2. Bake, uncovered, at 450° for 25-30 minutes or until golden brown, stirring once.
